Kale Salad with Avocado Basil Dressing
Creamy avocado basil dressing is perfect for a summertime salad. This is so easy to make and has simple ingredients. It is great on salad or as a dip for veggies.
I love making my own dressing. It takes almost no time at all and you can change up the ingredients depending on what you have on hand. It also saves money and is healthier, which is always good.
Right now I have a ton of basil growing in the garden, so it has been going in a lot of recipes. The combination of the basil and avocado in this salad dressing is amazing. The avocado gives makes it super creamy, the basil gives some sweetness and lemon juice makes it a little tangy.
I love this dressing on kale salad. The kale has a slightly bitter flavor, so the sweetness of the dressing goes great with it. Just throw in whatever veggies you like into the salad and serve with some crusty bread for a easy meal. It would also be good with some baked tofu or tempeh to add a little more protein. You can also use this as a dip for veggies instead of as a dressing.
The salad dressing comes together really quickly. The blender does most of the work. Once it is all blended just pour it over the kale and add in your veggies. I like to use my hands to rub the dressing into the kale. It helps soften up the kale a little bit.
- 1/2 avocado
- juice of 2 lemons
- 1/2 cup basil
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 cup water
- 1 bunch Kale
- veggies of your choice
Scoop half of an avocado in the blender or food processor. Add in the lemon juice, basil, olive oil and salt and blend.
Slowly add the water in until you reach the consistency that you would like. You may use a little less or a little more water. If you are using this recipe for veggies dip you want it to be a little thicker.
Tear the kale into small pieces and put into a large salad bowl. Pour the dressing over the kale and toss until all of the kale is coated. I like to use my hands to rub the dressing on the kale. It helps to soften the kale up a little bit. Add in the veggies you want to use and toss it all together.
