Christian Vegan Cook
My name is Kim Neff and I love cooking and eating vegan foods. I am a mother of 2 great homeschooled kids and have a wonderful husband. My husband and I feel it is very important to share our Christian faith and our passion for plant based foods with our kids. I have been vegan for several years now and absolutely love it. Before becoming totally vegan, I was vegetarian on and off for awhile. Eating a plant based diet has helped me feel so much better and lose weight. About 5 years ago I was diagnosed with fibromyalgia and was feeling crappy. After reading several books about veganism I made the switch and have been feeling better and better everyday. The Vegan Diet and what it has done for me.
The first couple weeks of going vegan was ruff. I felt worse than I did before but after that I started to feel better. Through this experience I have noticed that what I eat does effect how I feel. When I do cheat I notice the next day that my fibromyalgia symptoms are worse and I don’t feel as good. For me staying on a vegan diet and creating vegan recipes keeps me motivated.
My Vegan Recipes
I have always had a passion to cook and enjoy foods from all different backgrounds. Now I get to use my abilities to create those same dishes that I love into vegan recipes that I can still have. In fact, the best part is when I can create a vegan recipe that no one knows it is vegan. I have done this many times when I take food to potlucks or gatherings and most of the time if you don’t tell they don’t know.
