About me

My name is Kim and I am passionate about cooking and eating yummy vegan food.  I am a Certified Health Coach, wife and the mother of 3 beautiful kids on earth and a sweet baby in heaven.  Although most of our time is spent chasing kids, my husband and I also love to exercise, travel and hike.  

How I became vegan

About 10 years ago I was diagnosed with Fibromyalgia and I felt terrible.  This led me to start learning about food and finding out what made me feel better.  I spent several years on and off a vegetarian diet.  It took me a little while to transition to a totally vegan diet, but once I did I noticed a huge difference in the way I felt.  This all definitely did not happen over night.  I made small changes that seemed manageable and eventually all the small changes added up.  It has been a long journey to where I am now.  I have learned to listen to my body and I try to eat as clean as possible.  I do have a sweet tooth though, so a treat now and then is a must.

With three very busy kids, I know first hand how hard it can be to make healthy meals that the whole family enjoys.  My husband and son are not totally vegan, my oldest daughter is vegetarian and our baby and I are vegan.  My son also has a gluten allergy, so that makes everything a little more complicated.  At home I cook gluten free vegan meals and have found this is what works for my crazy family.  Every situation is different, but incorporating more plant based meals in your diet can really benefit everyone.

I have also learned that daily exercise is necessary for me to feel my best.  Nutrition is only one part of being healthy.  I always thought that I hated to exercise or it would make my already sore muscles hurt more, but I was very wrong.  Now I hate it when I miss a workout.

  1. I feel like I was reading about myself. It feels so good to know I am not alone. I have been a gluten, soy and corn free Vegan for 6 months. I also avoid nightshades because they cause inflammation. I am a mother of three who was diagnosed with Fibromylagia in 2013 but have had symptoms since 2010. Thank you for writing your blog. I am looking forward to following you and learning more on this new journey.

    1. Thank you for following me. I hope that you are finding some relief from your symptoms. Fibromyalgia is definitely a hard journey and has its ups and downs.
