So tonight I tried a couple of the recipes that I was thinking about using for Thanksgiving. I made the Thanksgiving meatless loaf from Fat Free Vegan Kitchen. It turned out great, the kids wanted seconds which is always a good sign. For the sides I made mashed potatoes, gravy, cranberries and apple cider and caramelized onion green beans.
Apple Cider and Caramelized Onion Green Beans
1 large onion sliced
1 Cup apple cider
4 -5 cups of chopped green beans
1/2 Cup chopped walnuts
Salt and pepper to taste
Bring 1/4 cup of water to a boil in a pan. Add the onion to the pan. Add more water as it is needed to keep the onions form sticking (I keep a cup of water by the stove and add about 1/4 cup at a time). It will take about an hour for the onions to soften and start to brown. Once the onions are done, add in the apple cider and reduce by half. Once the cider is reduced add in the green beans, salt, pepper and walnuts. Stir to combine.
Cranberry Sauce
1 bag of fresh cranberries
1/4 cup sugar
1/4 cup maple syrup
1/4 tsp cinnamon
Combine all of the ingredients in a sauce pan and bring it to a boil. Boil for about 20 minutes. Transfer it to a bowl and let cool.
