Chocolate Energy Balls

Energy balls are the perfect snack for busy days.  They are packed with protein and chocolaty goodness.  They are great for hiking, after working out or just to help you get through the afternoon.

With all of the back to school prep going on these energy balls have been great for a quick snack.  Shopping for school clothes and supplies takes every drop of energy I have.   The kids love them too and i would much rather have them eats these than sugary snacks or chips.  They are also great to put in the kids lunch boxes to give them some energy for the afternoon at school.

Chocolate Energy Balls

To make these energy balls I combined nuts, oats, dates, peanut butter and chia seeds plus some chocolate protein powder.  These snacks are super easy to make, which great because they disappear very quickly.  Everything just gets out in the food processor then gets rolled up.  If you make extra they can be frozen to have ready when you need them.

The ingredients can be changed up a little depending on what you have on hand.  Use your favorite kind of nuts.  I used pecans in this recipe, but almonds would also be great.  Substitute your favorite kind of nut nutter for the peanut butter.  After making the balls I rolled them in a little unsweetened coconut.  Finely chopped nuts would also be delicious.

Chocolate Energy Balls

Prep Time 15 minutes
Servings 10

Ingredients

  • 1/4 cup pecans
  • 1/2 cup oats
  • 25 dates
  • 1/4 cup peanut butter
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 scoop chocolate protein powder I use Vega brand
  • 1 tbsp maple syrup or agave
  • 1/4 tsp salt
  • 1/3 cup shredded unsweetened coconut for rolling optional

Instructions

  1. Put the nuts into the food processor and pulse them a few times just to start breaking them up.  Add in the oats and dates and pulse a few times again.  

  2. Add in the remaining ingredients and pulse it until everything is finely chopped and well combined.

  3. Scoop out a heaping tablespoons and roll into a tight balls. You should get about 10-12 energy balls depending on how big you make them. Store leftovers in a sealed container or freeze them.
