Chocolate Energy Balls

Ingredients

  • 1/4 cup pecans
  • 1/2 cup oats
  • 25 dates
  • 1/4 cup peanut butter
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 scoop chocolate protein powder I use Vega brand
  • 1 tbsp maple syrup or agave
  • 1/4 tsp salt
  • 1/3 cup shredded unsweetened coconut for rolling optional

Instructions

  1. Put the nuts into the food processor and pulse them a few times just to start breaking them up.  Add in the oats and dates and pulse a few times again.  

  2. Add in the remaining ingredients and pulse it until everything is finely chopped and well combined.

  3. Scoop out a heaping tablespoons and roll into a tight balls. You should get about 10-12 energy balls depending on how big you make them. Store leftovers in a sealed container or freeze them.
