Vegan Lemon Kale Pasta

This time of year is so busy for my family.  It seems like we have something going on every night of the week.  Both of my older kids are involved in sports and always have school stuff happening. Even with all the craziness, I still feel it is important to sit down to dinner as often as possible and I also like the kids to have a healthy meal before they play or practice.  I can’t always make it happen of course, but its a goal.  I also have learned the hard way that eating is essential before going to the ballpark because the concession stand food is scary and vegan options don’t exist.  

Quick dinners that require very little cleanup are life savers on busy nights.  Lemon kale pasta definitely fits this description.  It can be made in one pot and only takes about 20 minutes to put together.  The pasta is also super filling to keep the kids going.

I use gluten free brown rice noodles to make the lemon kale pasta, but any kind will work for this recipe.  I also use packaged baby kale so it is easier and faster to make.  If you have time you can use a big bunch of kale, remove the stems and chop it up.  Once the pasta is cooked, I use the same pot to cook the garlic and kale then add the pasta back in along with the rest of the ingredients.

Ingredients

  • 1 pound Pasta any kind will work
  • 10 oz Baby Kale (2 Packages)
  • Juice from 2 Lemons
  • 2 or 3 cloves Garlic
  • 2 tbsp Olive Oil
  • 1 tsp salt
  • Vegan Parmasen or Nutritional Yeast optional for sprinkling

Instructions

  1. Bring a large pot of salted water to a boil.  Cook the pasta according to the package directions.  

  2. While the pasta is cooking finely mince the garlic and juice the lemons. 
  3. When the pasta is finished drain it and set it aside. 
  4. Return the pot to the stove and heat the olive oil on medium heat. Add in the garlic and the kale. Saute it until the kale is wilted.
  5. Add the pasta, lemon juice and salt into the kale and mix until it is incorporated. 

  6. Serve with vegan parmesan or nutritional yeast.
