Vegan Lemon Kale Pasta

This time of year is so busy for my family.  It seems like we have something going on every night of the week.  Both of my older kids are involved in sports and always have school stuff happening. Even with all the craziness, I still feel it is important to sit down to dinner as often as possible and I also like the kids to have a healthy meal before they play or practice.  I can’t always make it happen of course, but its a goal.  I also have learned the hard way that eating is essential before going to the ballpark because the concession stand food is scary and vegan options don’t exist.

Vegan Taco Pasta

This version of  taco pasta was inspired by Pinterest.  I love looking at all the pictures of food and I think I may be slightly addicted.  I have been finding lots of recipes to try to veganize.  We were getting into a little bit of a food rut, so I really wanted to try to veganize some of the recipes that I have seen.  The kids will generally eat anything that has pasta in it and they love tacos, so I figured this would be good to start with.  We all loved it!  The sauce turned out super creamy with all the great taco flavors.  Taco pasta will definitely be going into the dinner rotation on a regular basis.

Vegan Macaroni and Cheese (with Cauliflower, but don’t tell)

Who doesn’t love mac and cheese?  My kids are always asking for it and it is one of those things that I don’t like to give them on a regular basis just because it is not very nutritious.  I have found a way to make all of us happy.  The base of this cheese sauce is cauliflower.  It comes out super creamy and cheesy tasting.  I feel a lot better about the kids eating this version of mac and cheese and the kids are happy because I let me have it a lot more.

 

 

Tomato Basil Pasta Sauce

This is my favorite recipe for pasta sauce.  I am trying to avoid the store bought kind because there is so much sugar in it, but it is so convenient.  This sauce is really quick to make because I used canned tomatoes (try to find an organic brand).  Right now I have tons of basil in my little garden, so I think I will be making this a lot.  This makes a big batch of sauce, but you can always freeze the leftovers or cut the recipe in half.

 

 

 

Cacciatore over Whole Wheat Pasta

Cacciatore is a dish that I grew up with.  My mom and my grandma used to make it all the time, but their version had chicken in it.  I used all the same veggies and served it over whole wheat pasta.  The tomatoes and wine in the cacciatore make a nice light sauce for the pasta.  It would be great with vegan “chicken” cutlets, like Gardien, in it as well.

 

Caulifredo Pasta

I think this is one of the easiest pasta sauces I have ever made.  The kids named it caulifredo because it is made with cauliflower and it is super creamy and a little cheesy like alfredo sauce, only with almost no fat.  I roasted the cauliflower before blending it for the sauce, which really brings out the flavor.  This is also a very budget friendly pasta dinner.  Pasta is always a kid pleaser in my house, but I think caulifredo is going to be a new favorite.  The kids devoured it and then were asking for seconds and then thirds.

 

Spinach Pesto Pasta

Spinach pesto pasta is a super quick and delicious meal.  The pesto is raw and comes together in just a few minutes, so it is great for a weeknight dinner.  I use walnuts in the pesto sauce and no extra oil to cut the calories a little bit.  Jut serve it over your favorite whole wheat pasta.

 

Sun Dried Tomato and Spinach Pasta

Tonight was another night when I needed a quick dinner.  We got home really late last night from our trip and were busy at church today, so I didn’t want to spend a lot of time in the kitchen.  This pasta was finished in about 15 minutes.  The longest part of cooking this meal is waiting for the water to boil.  Even though it is quick it has tons of flavor.

 

Pasta and No-Meatballs

Pasta and no-meatballs is one of my go to meals.

The whole family loves it and it is easy, as well as inexpensive to make.  The no-meatballs have a great texture and hold up well with the sauce and pasta.  I usually serve this with a salad or some steamed broccoli.

 

 

Happy Halloween

Green Bread & Pumpkin Pasta

 

Almost every Halloween we start the day with Pumpkin Pancakes and then have Pumpkin and Sage Pasta with Green Slime Bread.  I have had to come up with vegan versions of these recipes and they turned out just as delicious.  The slime for the bread is a bag of organic spinach blended up with about a 1/2 cup of Earth Balance.  Spread it on a loaf of bread and bake it at 375 until it is bubbly, about 10-15 minutes.  Just make sure you check your teeth after eating it so you don’t have a green slime smile.  I hope that you all have a happy and healthy Halloween.
