It is crazy how this cashew dip tastes so cheesy with no cheese. The cashews make it super creamy and rich. I love to make this for company or to take to a party.
The cashew cheese is great with tortilla chips, as well as with raw veggies or spread on bread. I actually prefer to dip the veggies in the cashew cheese. This is a recipe that you may want to double because it is so good you will want to put it everything.
One of my friends gave me this recipe a while ago. I am not sure where she found it, but I am so thankful that she passed it on.
Cashew Cheese Dip
2 cups raw cashews
3/4 cups water
1/2 cup of roasted red peppers chopped
1/4 cup nutritional yeast
1 tsp salt
1 tsp garlic powder
2 tsp onion powder
1/4 cup lemon juice
2 Tbsp tahini
Soak the cashews in the water for a least 2 hours then drain them. Put the cashews and all of the other ingredients in a blender and blend until smooth. You made need to add a little more water to get the cashews to blend all the way, but just add a little at a time. Serve at room temperature or chilled with chips, veggies or bread.
