Baked Quinoa and Broccoli

This is a super simple one dish meal that has tons of flavor.  Quinoa, broccoli and chickpeas are baked with lemon and garlic.  It makes the perfect weeknight meal.

The baked quinoa and broccoli is a complete meal in one dish.  A Protein, a grain and veggies cooked all at the same time!

I love how easy this is to make and clean up.  I don’t always have time to do a lot of prep work, so this is one of my go to meals.  Plus the ingredients are simple and are things that I usually have on hand.

Baked Quinoa and Broccoli

Really the hardest part of making the baked quinoa and broccoli is mincing the garlic.  Once that is done everything  just gets put in the dish.  Broth and quinoa go in the bottom the chickpeas and broccoli go on top.  I use frozen broccoli to make it even easier.  Put it in the oven and dinner is ready in 45 minutes.  Plenty of time to get everything else done, like helping with homework while trying to entertain a toddler.

Ingredients

  • 1 cup uncooked quinoa well rinsed
  • 3 or 4 cloves minced garlic
  • 1 3/4 cups vegetable broth
  • juice of 2 lemons
  • 1 tsp salt
  • 2 cans chickpeas drained and rinsed
  • 2 10 oz bags frozen broccoli
  • 1 tbsp olive oil

Instructions

  1. preheat the oven to 400 degrees

  2. In a 9X13 baking dish combine the broth, minced garlic, lemon juice and salt.  Add in the rinsed quinoa and stir.  Put the chickpeas over the quinoa and then top with the broccoli.  Drizzle the olive oil across the top of the broccoli and sprinkle with a little salt and pepper.  

  3. Cover the dish with foil and bake for 30 minutes.  Uncover and bake for another 15 minutes.  Let cool for a few minutes before serving.
