Baked Quinoa and Broccoli

  • 1 cup uncooked quinoa well rinsed
  • 3 or 4 cloves minced garlic
  • 1 3/4 cups vegetable broth
  • juice of 2 lemons
  • 1 tsp salt
  • 2 cans chickpeas drained and rinsed
  • 2 10 oz bags frozen broccoli
  • 1 tbsp olive oil


  1. preheat the oven to 400 degrees

  2. In a 9X13 baking dish combine the broth, minced garlic, lemon juice and salt.  Add in the rinsed quinoa and stir.  Put the chickpeas over the quinoa and then top with the broccoli.  Drizzle the olive oil across the top of the broccoli and sprinkle with a little salt and pepper.  

  3. Cover the dish with foil and bake for 30 minutes.  Uncover and bake for another 15 minutes.  Let cool for a few minutes before serving.
