
Vegan Cauliflower Pizza Crust
I can’t believe how long it has been since a lasted updated my blog. I guess life just got in the way, but I’m ready to start again. So much has happened in the last few years. Lots of happiness and sadness. But now it is time to make time for the things I love to do. I certainly haven’t stopped cooking but I really have missed my blog.
Since my last post my son has been diagnosed with a gluten allergy. He had a lot of crazy symptoms that I never would have thought were related to food. He was dizzy, had severe joint pain and developed a rash. Once we got him to the right doctor and eliminated gluten from his diet all of his symptoms went away and haven’t come back.
He is the reason I made the gluten free cauliflower pizza crust. I am always trying to recreate some of his favorite foods. We have tried many store bought gluten free crusts, but they all seem to have a ton of crazy ingredients or just don’t taste great. My carb loving family all really liked this crust and it can be topped with all of your favorite pizza ingredients.
The cauliflower needs to be steamed, cooled and then the water needs to be squeezed out so you don’t end up with a soggy crust. This is a little time consuming, but it can be done a head of time. I steamed my cauliflower early in the day and then left it to cool until I was ready to make dinner.

Once you combine all the ingredients the crust just needs to be pressed onto a baking pan and baked for 20 minutes without any toppings on it.
Once the cauliflower crust has baked add all of your favorite toppings and pop it back in the oven for another 10 minutes.

Vegan Cauliflower Pizza Crust
1 Head of Cauliflower
1/4 cup ground flax seeds
1/2 cup chick pea flour
1 tsp salt
1/4 cup nutritional yeast
Cut the cauliflower into florets and then steam it until it is very soft. Let the cauliflower cool enough to be able to handle it. Once it is cool place the cauliflower in a towel and squeeze out as much water as possible.
Preheat the oven to 425 and line a baking sheet with parchment or foil. Spray the parchment or foil with a little bit a oil or cooking spray.
Combine the flax seed with 1/4 cup of water in a small bowl. Let it sit about 10 minutes until it has thickened.
In a large bowl combine the cauliflower, flax mixture, chick pea flour, salt and yeast. Mash it all together, breaking up the cauliflower as much as possible (I used my hands to mix it). When it is totally combine press the mixture onto the prepared baking sheet. Keep pressing it until it is about a 1/4 of an inch thick. Bake the crust WITHOUT toppings for about 20 minutes until it starts to brown. Remove the crust and add whatever toppings you like. Bake it again for 10 more minutes.
Let the pizza cool for a few minutes before cutting it.
