Vegan Cilantro Lime Tofu
I have never been a big fan of tofu, but I have found a new way to cook it that I really like. I have started baking the tofu for at least 45 minutes at 325 after it has been marinated. This gives the tofu a firm texture and really helps it take on the flavor of the marinade.
I love the combination of the cilantro and lime in this dish. I served the tofu with black beans, but it would be great on its own as well.
Vegan Cilantro Lime Tofu
1 block tofu drained and pressed (see note)
Juice and zest from 1 – 2 limes
1 small onion thinly sliced
2 cloves garlic finely minsed
1 tsp of salt
1/4 cup chopped cilantro
Cut the block of tofu into 1/2 inch squares. Combine all of the ingredients in a bowl and let it marinate for at least 2 hours. The longer the better, even overnight is fine.
When you are ready to cook the tofu, preheat the oven to 325. Lightly coat a sheet pan with olive oil. Place the tofu mixture on the pan and bake for 45 minutes. Turn the tofu twice while it is baking.
Serve over rice or with black beans. Sprinkle with some fresh cilantro just before serving.
Note:
To press the tofu: Place the block in a strainer and set a small plate on top of it. Set something heavy like a large can on top of the plate. Let the tofu drain for at least 30 minutes.
