Blueberry Oatmeal Muffins (Vegan and GF)

Ingredients

  • 2 very ripe bananas mashed
  • 1/2 cup non dairy milk
  • 1/3 cup sugar, agave or maple syrup
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 1/4 cup flax meal
  • 2 tbsp chia seeds
  • 1/2 tsp salt
  • 2 1/2 cup old fashioned oats
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375 degrees.  Line a muffin pan with paper liners.

  2. In a large bowl mash the bananas until they are almost smooth.  Whisk in the sugar (or agave or maple), milk, cinnamon, vanilla, flax, chia and salt.  

  3. Stir in the oatmeal until everything is combined then gently stir in the blueberries.  Fill the muffin liners almost to the top (I use and ice cream scoop) .  This recipe usually makes 10 muffins.  

  4. Bake the muffins for 30 minutes.  Remove from the pan and let cool on a rack.  Store them in a covered container in the fridge.
