Pumpkin Brownies (Vegan and Gluten Free)

  • 1 cup finely ground oat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup cocoa powder
  • 1/2 cup sugar
  • 1 cup canned pumpkin
  • 1/4 cup vegetable oil
  • 1/2 cup semi sweet chocolate chips


  1. Preheat the oven to 350 degrees.  Butter a 8X8 baking pan or line it with parchment paper.  

  2. In a large bowl mix the oat flour, baking powder, baking soda, salt, cocoa powder, and sugar.  Wisk it together until it is all well combined.  

  3. Add in the pumpkin, and oil and wisk it until it is totally combined.  Stir in about 2/3 of the chocolate chips.  Pour the batter into the pan and top it with the remaining chocolate chips.  

  4. Bake for 25 to 30 minutes.  Let cool before cutting.
