Drain the tofu and place it between 2 clean towels. Set a heavy pot on top of it and let it sit for at least 30 minutes.
Once the tofu is pressed preheat the oven to 375 degrees. Cut the tofu into half inch cubes. Toss the cubes with the soy sauce and let it absorb for a few minutes.
Line a large baking sheet pan with parchment or rub it with a little olive oil. Spread the tofu cubes in a single layer on the pan. Bake the tofu for 45-60 minutes until the outside is brown and crispy. Toss the tofu about halfway through cooking.
