Banana bread - Vegan and Gluten Free

  • Dry ingredients:
  • 2 cups oat flour
  • 1 cup gluten free flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 tbsp flax meal
  • Wet Ingredients:
  • 2 large very ripe bananas
  • 2 tsp vanilla
  • 1/2 cup sugar
  • 1/2 cup non dairy milk
  • 1/2 cup pecans or walnuts


  1. Preheat the oven to 350 degrees.  Grease a bread pan or line it with parchment.  

  2. In a medium sized bowl combine all of the dry ingredients. 

    (Grind old fashioned oats in a food processor if you want to make your own oat flour)

  3. Mash the bananas In a large bowl or the bowl of a stand mixer.  Once the bananas are mashed very well mix in the vanilla and the sugar.  

  4. Add about half of the dry ingredient mix into the wet ingredients.  Mix on low speed then add half of the milk and mix.  Repeat with the remaining dry mix and the milk.  Mix it until it is just incorporated.  Stir in the nuts if you are using them.  

  5. Pour the batter into the prepared bread pan.  Sprinkle with a few additional nuts (optional).  Bake for 35-40 minutes.  

  6. Let cool for at least 10 minutes before slicing.
