Walnut Pesto Sauce

Walnut pesto sauce is amazing on almost everything.  This sauce is packed with flavor from lots of fresh basil.  Add it to pasta, sandwiches, pizza or even soup.

Right now I have a ton of basil growing in my garden, so I have been making lots of this sauce.  There is nothing like homemade pesto in the summertime.  It gives everything such a fresh flavor.   My favorite way to use it is to put it on pasta for a a quick dinner.  It is also delicious on a veggie pizza.

Walnut pesto is incredibly easy to make.  Everything just goes into the food processor.  It is ready in just a few minutes.  I used walnuts instead of pine nuts for in this recipe, but you could use any nuts that you want.  I also used vegan Parmesan cheese, but you can replace that with nutritional yeast or just leave it out.   If you have leftovers just store it in a sealed container and keep it in the fridge.  My leftovers never last very long though.

Vegan Walnut Pesto Sauce

Servings 8

Ingredients

  • 3 cups fresh basil
  • 1/2 cup walnuts
  • juice from 1 lemon
  • 1-2 cloves garlic
  • 1/4 cup vegan Parmesan or nutritional yeast
  • 1/2 tsp salt
  • 1/4 cup extra virgin olive oil

Instructions

  1. Add the walnuts into the bowl of a food processor.  Pulse them a  few times to start breaking them down.

  2. Add in the remaining ingredients and process until smooth.  You can add  in a little more oil if you want a thinner consistency to the sauce.
