Vegan and Gluten Free Banana Chocolate Chip Pancakes

Fluffy and sweet banana chocolate chip pancakes are the perfect way to start any day.  These pancakes are amazing topped with vegan butter and drizzled with warm maple syrup.  Sprinkle a few chocolate chips on top to make them even better.

I make pancakes almost every weekend, so I like to try a lot of different flavors.  These are one of my family favorites.  Whenever you get chocolate for breakfast you know its going to be a good day.   These pancakes are kind of like having dessert for breakfast.

This recipe combines two of my favorite things:  banana bread and pancakes.  The chocolate just puts it over the top!  The bananas give the pancakes a nice sweetness without adding a ton of sugar.

I used Bob’s Red Mill 1 to 1 flour in this recipe, but you can try your favorite gluten free blend.  I have found that different blends need different amount of liquid though.  If you substitute another blend you may need a little more or a little less milk.  You can also used regular unbleached flour in this recipe as well.

Ingredients

  • 2 tbsp flax meal
  • 6 tbsp water
  • 1 3/4 cup nondairy milk
  • 1 tbsp apple cider vinegar
  • 2 cups gluten free flour I used Bob's Red Mill 1 to 1
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 4 tbsp canola oil
  • 2 tsp vanilla
  • 2 very ripe bananas mashed
  • 1/4 cup mini chocolate chips

Instructions

  1. Combine the flax meal and the water in a small bowl.  Set aside to thicken. 

  2. Combine the nondairy milk and the apple cider vinegar in another small bowl and set aside.  

  3. In a large bowl combine the flour, baking powder, baking soda, cinnamon, salt and sugar.  

  4. Add the milk mixture and the flax mixture along with the oil, vanilla and mashed banana into the dry ingredients. Mix it all together just until everything is well combined.  Stir in the chocolate chips.  

  5. Heat a large skillet or griddle over medium high heat.  Coat the griddle with vegan butter or cooking spray.  

  6. For each pancake, spoon about 1/3 cup of batter onto skillet. Cook for several minutes until the surface of pancakes has lots bubbles. Flip with a spatula, and cook until brown on the underside, 1 to 2 minutes more.
  7. Keep the cooked pancakes in a warm oven on a baking sheet until you are ready to serve.  Serve with warm maple syrup and extra chocolate chips.
